bruno's perfect chocolate chip cookies

method

I like using chopped baking or bar chocolate for texture but feel free to use your favorite chips!

1.5 Cups bread flour

1.5 cups pastry flour

1 tsp baking soda

2 Cups butter, cut into small cubes

1 cup sugar

2 Cups brown sugar

1 tsp salt

4 whole eggs

3.5 cups chopped dark chocolate

 

Makes 2 dozen

 

How chewy or crispy a chocolate chip cookie should be is open to debate - and what a debate it is! On one side there is the argument for the snap and crunch of a crispy cookie and then there are those who demand a soft cookie that promises a gooey chew.

I am a staunch supporter of chewy cookie chip cookies and for me this is the perfect recipe with the right balance of fat, moisture and flour. Some people swear that using shortening is better but I totally disagree and again say loud and clear: everything is better with BUTTER!
